This is trial batch of a tart cherry cider that we made only 1 gallon of.
Newtown Pippin, Black Twig and Royal Gala apples fermented dry with an English cider yeast. This batch started as batch 007. After fermentation and aging we split 007 in half and back sweetened this half to a medium dry cider before putting it in a keg.
